If you want to live in Turkey as a foreigner, you need to have a job! In my experience, Turkey is not very foreigner friendly when it comes to jobs. you can hardly find any job that offer work-visa sponsorship. To top that, there are some professions that are prohibited for foreigners. Let me clarify that by foreigner, I mean those without a Turkish passport. IF you have a Turkish passport, these restrictions do not apply to you. 
Prohibited Professions for Foreigners in Turkey
I'll get straight to the list because its kind of a long and disappointing list.
When in Turkey as a foreigner, you are not allowed to work in the fields of:
• Nursing
• Dentistry
• Veterinary medicine
• Midwifery
• Pharmacology
• Pharmacy manager
• Public and private hospital management
• Captain of ships and cruise boats
• Serving on the ship (crew and secretary)
• Diving, exploring and fishing
• Oyster and pearl fishing
• Sponge and coral fishing
• Tour guide
• Attorney
• Verdict
• Prosecutor
• Official notary office
• Customs brokerage
• Customs consultant and assistant
• Public security institutions (security, police...)
• Defense Industry
While not on the official list, you should know that you can not work as an official translator either.
As an academic myself, I know how hard it is to get in the fields mentioned above. it is really disappointing that you can not work in your chosen field if you are an expat in Turkey. Most foreigners either work in hotels, become realtors or teachers in Turkey. So if you don't want to do those jobs, I hope this list helps your decision.
